How to turn frozen food into a healthy meal: Shrimps and peas rice

Today's post will be another great quick dish of mine, being always in a hurry this week I needed to make something easy yet nourishing.
This is not a proper risotto as the procedure is different, however it has an easier approach and it came pretty close to it after all so it is worth giving it a go if you are a beginner in the kitchen.
I chose basmati rice as it cooks faster and I really like its texture combined with the others ingredients.
This is truly a super speedy recipe and it only requires frozen food, so the chopping part is reduced to almost zero. It is also very delicate as the shrimps and the peas are rather sweet but the combo is very pleasant and it will satisfy the lovers of non spicy food and it will be suitable for children.
I am a firm believer of the superiority of fresh food, however this is the proof that it is possible to cook a quick and healthy meal including with frozen ingredients when we lack of time or energy.
200g basmati rice
extra virgin olive oil
Peel off the skin from the shallot, chop it thinly and add it to the pot with a tablespoon of extra virgin olive oil at high heat for a minute to allow the shallot to release its aroma in the oil.
Bring to boil 1L of water in a kettle and when it is hot add it to the pot along with the vegetable stock. Let it melt, stirring with a wooden spoon if necessary.
Put the rice, the frozen peas and the shrimps in the pot and cover with a lid.
Let it cook for 10 minutes, then check the rice. If it is ready, season with some salt, stir well and then serve with some grated parmesan cheese on top and if you like, a sprinkle of pepper.
