I am back with another yummy recipe, today I am going to show you how to make delicious pineapple fritters with canned pineapple.
The method couldn't be easier: it is perfect for beginners in the kitchen, literally, anyone can do this.
It is also a very economical and practical recipe for when you don't have many ingredients in the pantry.
I always keep a tin or two of fruit in syrup because it is very handy to have and canned pineapples are my favourites, followed by peaches. I don't use them often, but they are very convenient for a last-minute, occasional, sweet treat.
Admittedly, canned fruit is not very healthy because of all the sugar contained, but I would usually mix them in smoothies with fresh fruit and vegetables, so it kinds of balance it out.
It is quick to prepare therefore it would be a great last-minute quick fix for when you are guests and no dessert. The best part is that anyone can eat that: it is vegan!
Ingredients for pineapple fritters recipe:
220g of water
150g white flour (plus some more in a bowl)
35 gr sugar
Frying oil (I used sunflower oil)
Put a wok pan or a pot with high borders on high heat and pour abundant sunflower oil (low oil will make them soggy so don't be stingy).
Mix the dry ingredients in a bowl and then add the water. Whisk well with a fork to obtain a loose batter.
Put some flour in a bowl or a plate and dip a slice of canned pineapple in it, making sure to flour both sides.
After dipping it in the batter on both sides, take it out with a fork and let the excess drip down.
When the oil is well hot, gently but quickly put one of the slices of pineapple coated with the batter in the pan.
Deep fry on both sides for 3 minutes. The best practice would be to cook one, max two slices at a time to avoid the temperature of the oil going down.
When the deep-fried pineapples are ready, take them out with a slotted turner to drain any excess oil.
Put some paper towel on a tray or a plate and place the hot fritters on it. Sprinkle some more sugar on them.
Serve warm and enjoy!
