Chocolate cookies (without butter and without eggs)

Today I am sharing with you my delicious chocolate biscuits recipe.

I am such a sucker for chocolate biscuits, however, I prefer biscuits without butter as well as biscuits without eggs and it is not easy to find them at my local supermarket so I decided to bake some myself!
I opted for healthy chocolate cookies without eggs and butter. I am really trying to reduce my animal product intake and these chocolate chips biscuits have also fewer calories compared to store-bought biscuits (calories in chocolate biscuits: 84-90)

There are so many chocolate biscuits recipes on the internet, but I tested this one a few times and for me, it is by far the best chocolate biscuits ever!
How to make biscuits without eggs and without butter?
Biscuits are easier to make compared to cakes and usually, eggs are not necessary.
I swapped the butter with sunflower oil and the dough came out immediately perfect: nice and smooth and not sticky.
The result after baking is also excellent: the inside is nice and soft and the chocolate really melts into your mouth.
They kind of remind me of a classic Italian cake called "torta tenerina" made with dark chocolate, minus the insane amount of butter present in the traditional recipe.
I love extra dark chocolate so I used 85% from Green and Blacks but you can easily make vegan chocolate biscuits or even vegan chocolate chip cookies simply by choosing vegan dark chocolate.

How to make chocolate biscuits
Ingredients for 15-16 chocolate chip cookies
130g white flour
70g water
50g white sugar
50g dark chocolate chips
50g sunflower oil
8g baking soda
20g cocoa powder
Making delicious could be any easier than this:
First, reduce your dark chocolate bar into chips with the help of a knife.
To make vegan chocolate chip cookies, just use vegan chocolate.

Preheat the oven to 180 degrees
Place all the ingredients together in a bowl and mix them with a wooden spoon until a dough is formed.

Knead quickly the dough until smooth and even.

Incorporate the dark chocolate chips. Make sure to mix them quickly as the chocolate will start to melt the warmth of your hands.

Divide the chocolate dough into small balls.

Press on the chocolate dough balls with the plan of your hand to obtain the classic cookie shape.

Place some parchment paper or aluminium foil on an oven tray and add the chocolate cookies.
Bake them for 10-15 minutes.

Let them cool down on a rack.
Enjoy your dark chocolate biscuits with your favourite hot drink: in my case, I have got a latte made with homemade oat milk.
