Homemade low sugar Elderflower cordial

Ciao my friends! How's life?

Spring is slowly turning into Summer: the temperatures are finally rising, the sun is shining and the all the flowers are blooming. In fact, the elderflower season runs from late May to early July. It is one of my absolute favourites wild flowers as its scent is very intense and fresh that you can smell it from meters away while walking in the park. Despite my current terrible hay fever I decided to pick some and use the heads to make delicious homemade cordial, which is a super refreshing drink for summer.

It was my first attempt, so I made some researches online, read some blog posts about it and I was shocked by the insane amount of sugar I was supposed to add. Not for me. I don't like to use sweeteners either, so I decided to use less than half sugar and at the same time to double the quantity of water from the original recipe. I guess I could have used only honey but since it was my fist batch I was nervous of wasting half jar of my acacia honey so I opted for only to spoons to begin with.

The procedure itself is very easy, and it doesn't take more than 5 minutes.

I was really worried it would turn out shabby and dull but it is actually really nice!

The elderflowers' scent is very strong and the lemon skin gave it a lovely mellow yellow shade. It is still sweet but not too much. I am definitely make more the next time I am having a stroll to my local park!

Little tips for those who live in the city:

1) I picked the flowers from the trees that were hidden in the middle of the park to avoid the polluted ones near to the street and it is really important to pick them when the sun is shining to get the maximum flavour from them.

2)I chose organic, non-waxed lemons so I could use the whole fruit but remember to grate only the yellow part and leave the white skin underneath, which is very bitter.


Ingredients

15 heads of elderflower

17 tablespoons of sugar

2 tablespoons of runny honey

juice and zest from 2 big unwaxed lemons


Start washing thoroughly the elderflower in order to remove any dust or bugs.


In a sauce pan, pour 2l of water and bring to boil.


Add the sugar, the honey, the lemon juice and the grated zest (I included the lemon skins too, which will give a nice bright yellow colour to the cordial).


Let the sugar melt completely, which will take only a couple of minutes. and remove from the stove.


Now, place very gently the elderflower upside down into the pan and make sure they are fully submerged in the liquid.


Pop the lid on and let it infuse for 40 hours.

After that you can strain the cordial using a good quality kitchen towel or a very fine knit colander.


Store in a jar or a glass bottle in the fridge and enjoy it diluted with sparkling water, soda or prosecco.
