Healthy potato salad with squids and tomatoes

Ciao, welcome back to my blog!


Today I am sharing with you one of my most loved summer salads, which is made with boiled or steamed potatoes, sauté squids and fresh tomatoes with a lovely garlicky and spicy dressing typical of Mediterranean countries.


This healthy potato salad is ideal for the summer but it is also a great warm winter salad as it is a super filling and balanced meal (carbs from the potatoes, the lean protein of the squids and fibres from the tomatoes) while being low calories.


Yes, low calories.

On top of it, this recipe is incredibly easy to prepare and under 30 minutes, which makes it perfect for workdays or a lazy Sunday no-fuss meal.

Easy potato salad

INGREDIENTS FOR 2

  • 4 potatoes

  • 3 medium-size squids

  • 2 large tomatoes

  • 2 cloves of garlic

  • a small bunch of parsley

  • 3 tbsp extra virgin olive oil

  • a pinch of chilli flakes

  • a slice of lemon

Bring a pot of water to boil.


In the meantime, peel, wash and cut the potatoes into medium size cubes.


Add some salt into the boiling water and then toss the potatoes cubes inside and cover with a lid. They will take more or less 15-20 minutes to be fully cooked.



Place a pan on the stove and prepare the seasoning for the sauté squid: drizzle with extra virgin olive oil, the juice of a slice of lemon, some chilli flakes and some thinly chopped parsley and garlic.



While the potatoes are cooking, clean and wash the squid very well and then cut it into slices.



Wash and clean the ripe tomatoes and then cut them into chunky bits.



When the potatoes are fully cooked, drain the water and let it cool down while you are quickly doing the squid, which only takes a minute to be ready (if overcooked it will turn too chewy).



Set the pan on high heat and quickly cook the squid for a minute or two maximum until it turns whiter.



Mix all the ingredients in a bowl and add some extra seasoning: olive oil, chopped garlic and parsley, more chilli flakes if you like and some salt.


And there you have an excellent warm potato salad!


Enjoy with a good glass of Prosecco or some lemon and mint sparkling water.
