Potatoes, squids and tomatoes summer salad

Ciao fine people, welcome back to my blog! How are you today?

Today I am sharing with you one of my most loved summer salads, which is made with boiled or steamed potatoes, sauté squids and fresh tomatoes with a lovely garlicky and spicy dressing typical of Mediterranean countries.

This yummy salad is ideal for the warm temperatures as it is a super filling and balanced meal (carbs from the potatoes, the lean protein of the squids and fibres from the tomatoes) while being refreshing.

Like most of my recipes it is incredibly easy to prepare and under 30 minutes, which makes it perfect for work days or a lazy Sunday no fuss meal.


INGREDIENTS FOR 2

  • 4 potatoes

  • 3 medium size squids

  • 2 large tomatoes

  • 2 cloves of garlic

  • a small bunch of parley

  • extra virgin olive oil

  • chilli flakes

  • a slice of lemon

Bring a pot of water to boil.


In the meantime, peel, wash and cut the potatoes into medium size cubes.


Add some salt into the boiling water and then toss the potatoes cubes inside and cover with a lid. They will take more or less 15-20 minutes to be fully cooked.

Place a pan on the stove and prepare the seasoning for the sauté squid: drizzle with extra virgin olive oil, the juice of a slice of lemon, some chilli flakes and some thinly chopped parsley and garlic.

While the potatoes are cooking, clean and wash the squid very well and then cut it into slices.

Wash and clean the ripe tomatoes and then cut them into chunky bits.

When the potatoes are fully cooked, drain the water and let it cool down while you are quickly doing the squid, which only takes a minute to be ready (if overcooked it will turn too chewy).

Set the pan on high heat and quickly cook the squid for a minute or two maximum until it turns whiter.

Mix all the ingredients together in a bowl and add some extra seasoning: olive oil, chopped garlic and parsley, more chilli flakes if you like and some salt.

Enjoy with a good glass of Prosecco or some lemon and mint sparking water.

One tip that I use to make my table look pretty when we are eating is to invest in cute set of table cloth or placemats in bamboo, which is quick and easy to clean and also super stylish. I will link a similar alternative below for you:
