Vegan avocado pasta (creamy avocado pasta)

Today I am going to share with you a delicious vegan avocado pasta that is super easy to make and ready in only 15 minutes.

Avocado is a green, pear-shaped fruit often called an “alligator pear" for its skin.

It has been one of the most popular superfoods in the last decade for good reasons.

How to eat avocado:

There are multiple ways of cooking avocado apart from the classic avocado toast.

Avocado is a versatile food, perfect for beginners in the kitchen and it makes a perfect base for sauces, such as guacamole and salads.

I love it as a great vegan ingredient for healthy sweets and cakes too.

Its creamy consistency, high nutritious value and nutty flavour make it a precious food and an excellent meat substitute when transitioning to a plant-based diet as its fat content may help you absorb nutrients from plants.

Despite being super healthy and a great help if you are trying to reduce meat intake like I am, unfortunately, avocado is not the most sustainable of foods.

I really like avocado, however, not being an ethical product as well as being quite expensive, I decided to only enjoy it once a month.

As a result, my avocado dish of the month is this yummy avocado pasta.

I recently started to slowly transition towards a plant-based diet and during my last shopping, I bought a pack of silken tofu to avoid dairy and single cream.

I suddenly decided that I wanted to try a dish that was in between a vegan mac and cheese and an avocado pesto.

The main source of fats are almonds and avocado: no oil required!

Instead of a classic avocado spaghetti pasta, which usually has lemon, and it is made in a similar way to a guacamole sauce, I opted for macaroni, a shape of pasta I don't usually buy, but that I felt was very appropriate for this recipe.

Many avocado pasta recipes do not require silken tofu, but since I am not super familiar with it, I wanted to experiment with new ways of including it in my diet.

Admittedly, silken tofu doesn't have a specific taste, but it is a vital ingredient if you want a creamy avocado pasta as it will make the texture extremely velvety and rich.

To make my avocado pesto pasta, I simply combined a whole avocado with the tofu and the main ingredients to obtain a tasty vegan pesto sauce: basil, nuts and garlic.

In this recipe, I used almonds but you can use the kind of nut you prefer: cashews, pinenuts, pistachios, walnuts and whatever floats your boat.

It came out much better than I expected and my boyfriend was so surprised to hear that I didn't use dairy at all!

I am chuffed with the result and I also appreciated that it was a very filling and satisfying dish.

Paired with a vegetable side, it is a perfectly balanced meal that will keep you full for hours.

For the summer months, it could be easily modified and turned into an excellent avocado pasta salad just by adding some ripe tomatoes and thinly sliced red onion for an extra twist.

Ingredients for 2:

250g Maccheroni pasta

one ripe avocado

Half pack of silken tofu

50g of almonds

A clove of garlic

A small bunch of basil leaves

A pinch of chilli flakes

A pinch of salt

A pinch of black pepper

Tools needed:

Either a hand mixer or a food processor.

Avocado pasta recipe

- Bring to boil 1.5l of water.

- In the meantime, prepare your avocado pasta sauce:

Start by toasting the almonds in a non-stick pan for a couple of minutes.

Then chop them with the help of a knife and add only half of them to your food processor. Set aside the rest, which we will use to garnish.

- Cut the avocado in half, peel the skin off and remove the stone.

Add the pulp to the food processor as well as all the other ingredients and mix for 30 seconds in order to achieve an even avocado cream sauce.

- Cook the macaroni in boiling salted water for 6 minutes. Spare a cup of pasta water that we might need in case the sauce is too thick.

- Drain the pasta and add our creamy avocado and tofu pesto sauce. Mix with a wooden spoon and in case the sauce is too dry, feel free to add a splash of the pasta water we previously spared.

- Serve in a bowl with a basil leaf on top and a sprinkle of extra toasted almonds and chilli flakes.

There you have your vegan pasta with avocado, a healthy meal idea ready in only 15 minutes from start to finish.

It is can be refrigerated in a glass container and it will last for a couple of days.

I usually make a big batch so I can bring it to work for lunch the next day.
